Negli ultimi decenni il tema dell’inquinamento ambientale e delle sue conseguenze sulla salute è diventato una vera emergenza a livello mondiale. Il grande sviluppo dell’industria è andato di pari passo con la produzione e il rilascio nell’ambiente di centinaia di nuove sostanze chimiche, l’effetto delle quali si è dimostrato spesso controverso, manifestandosi come nocivo negli anni successivi alla loro introduzione.
Diversi studi sulla sicurezza hanno permesso di identificare una lista di sostanze chimiche ufficialmente dichiarate come nocive e dunque soggette a proibizione o a restrizioni nell’utilizzo (anche se i regolamenti variano notevolmente), accanto ad altre sostanze delle quali si sospetta una azione tossica e per le quali dovrebbe sempre vigere un principio di precauzione.
E’ importante sottolineare che alcune sostanze, indicate come nocive dal regolamento REACH per l’Unione Europea, sono invece utilizzate in Paesi extra-europei: pertanto la Comunità Europea ha vietato la commercializzazione di tali prodotti e, se individuati sul mercato, la pronta rimozione degli stessi.
Una particolare categoria di sostanze chimiche della quale ci accingiamo a parlare è quella dei cosiddetti “interferenti endocrini”, e in particolare, degli ftalati.

Gli interferenti endocrini: un pericolo nascosto nell’ambiente
Secondo una recente classificazione dell’Unione Europea, esistono 66 sostanze riconosciute ufficialmente come interferenti endocrini, mentre altre 52 molecole sono oggetto di studio perché sospettate di avere effetti patologici sul sistema neuro-endocrino.
Una volta introdotti – per via cutanea, orale o respiratoria – alcuni tipi di interferenti mimano gli ormoni, legandosi ai recettori delle cellule bersaglio e riproducendo gli effetti, ad esempio, degli estrogeni o degli ormoni tiroidei. Vari tipi di cancro sono ormono-sensibili (tumore dell’ovaio, della mammella, della prostata), perciò gli interferenti endocrini possono causare lo sviluppo del cancro e/o una recidiva dello stesso.
Altri tipi di interferenti si legano al recettore cellulare che accoglierebbe normalmente gli ormoni, impedendone il legame (ad esempio, interferenti anti-estrogeni o anti-androgeni) con danni della crescita e del metabolismo. Infine, altri tipi di interferenti bloccano o modificano il metabolismo ormonale agendo su un certo organo o un certo tipo di ghiandole (ad esempio, il fegato).

Cosa sono gli ftalati?
Gli ftalati sono esteri dell’acido ftalico, i quali hanno avuto un notevole incremento di produzione negli anni Cinquanta, quando venne immesso sul mercato il PVC, materia plastica estremamente versatile con molteplici utilizzi a livello industriale e tessile.
Il PVC puro è rigido, quindi per renderlo malleabile e flessibile a basse temperature viene miscelato con altre sostanze plastificanti, fra le quali gli ftalati. Perciò, gli ftalati vengono utilizzati nella realizzazione di oggetti in plastica e di indumenti, negli smalti per unghie, nelle vernici, negli adesivi, e sono usati come solventi in profumi e pesticidi.
Nell’organismo gli ftalati si comportano come interferenti endocrini: in particolare nella donna aumentano il rischio di cancro delle ovaie e della mammella mentre nell’uomo, agendo sulle cellule che provvedono alla spermatogenesi e all’omeostasi degli spermatozoi, possono causare infertilità oltre al tumore alla prostata.
Essi inoltre agiscono sul fegato alterando il metabolismo.

Gli ftalati passano nel cibo che poi mangiamo
Essendo contenute nella plastica, queste sostanze passano facilmente nei cibi e nelle bevande, specie se caldi (pensiamo al mettere il cibo appena preparato in un porta pranzo… di plastica!) o freddi (cibi avvolti in pellicola e conservati in frigorifero, in particolare carne e formaggi). Recentemente, l’IKEA ha ritirato dal mercato un bicchiere da viaggio, prodotto in India, il quale rilasciava una quantità di DBP (che è uno ftalato) superiore alla norma.
Una ricerca americana pubblicata nel 2014 (https://ehjournal.biomedcentral.com/articles/10.1186/1476-069X-13-43) ha dimostrato che le diete a prevalenza di carne, grassi animali (specie burro, margarina, latte) e di fast food sono responsabile di un maggior introito di ftalati, con le conseguenze che abbiamo descritto. La maggiore presenza di ftalati in questo tipo di cibi è legata a vari fattori, inclusi la loro preparazione e conservazione. Un’altra fonte di ftalati sono le creme per il corpo e i cosmetici.

Suggerimenti per diminuire l’assunzione di ftalati
Modificando alcune abitudini quotidiane, possiamo diminuire il carico tossico degli ftalati assunti attraverso la dieta e l’utilizzo di materie plastiche:
1 – Preferire alimenti a basso contenuto di grassi animali e soprattutto freschi
2 – Non conservare i cibi in materiali plastici, ma preferire il vetro, l’acciaio e la ceramica
3 – Non versare liquidi caldi in contenitori plastici in policarbonato (ad esempio: zuppe, caffè, tè)
4 – Preferire prodotti con marchio CE e controllare comunque le etichette
5 – Ridurre al minimo l’utilizzo di prodotti cosmetici contenenti ftalati e cercare sostanze più naturali (ad esempio: burro di karitè, idrolati, oli essenziali)
6 – Depurare periodicamente l’organismo, utilizzando sostanze naturali con azione chelante
7 – Provvedere a mantenere nella dieta buoni livelli di antiossidanti (ad esempio vitamina C, resveratrolo, papaya fermentata) e di prebiotici per l’equilibrio della flora intestinale.
